RECIPE 1: CREAMY MUSHROOM & BROCOLLI PASTA (4 servings)
Cashew sauce:
1 cup cashews (soaked for min. 4 hours)
½ lemon (juice)
1 tbsp. onion powder
¼ tsp. chilli flakes
½ tsp. sea salt
1 tbsp. olive oil
½ tbsp. tamari
1.5 cup water
1 stalk broccoli
mushrooms
coconut oil
3 white onions
8 garlic cloves
1 tbsp. Herbes de Provence
1 tsp. dried thyme
splash tamari
black pepper
extra chilli flakes
300g dried pasta
RECIPE 2: LENTIL & SWEET POTATO SOUP (4-5 servings)
200g red lentils (soaked overnight or for 8 hours)
2 small sweet potatoes
400ml coconut milk
2.5 cups water (add more for desired consistency)
½ leek (use bottom end)
2 celery stalks
3 white onions
10 garlic cloves
4cm piece ginger
1 tbsp. garam masala
1 tsp. turmeric powder
1 tsp. paprika
1 tbsp. cumin seeds or powder
1 tbsp. dried parsley
½ tsp. dried thyme
½ tbsp. dried oregano
black pepper & sea salt (to taste)
1 tbsp. lemon juice
RECIPE 3: CAULI STEAKS & SPICY MASH POTATO (serves 2)
2 cauliflowers (2 steaks per cauliflower)
500g white peeled potatoes
½ small white cabbage
1 tsp. Dijon mustard
½ leek
splash of almond milk (optional)
black pepper and sea salt (to taste)
Cauliflower marinade:
80ml olive oil
6 large garlic cloves
1 tsp. honey or maple syrup
1 tbsp. tamari
1 tbsp. paprika
1 tbsp. dried parsley
1 tsp. dried thyme
