Day 2 of the Engine 2 Diet is full of some great meals. Breakfast is a personal favorite cereal called “Rip’s Big Bowl”. You can find the link to the recipe below, but essentially it’s just some great whole grain cereals all grouped together with some great fruit mixed in. Lunch was left-over Black Bean Extravaganza from the Day 1 dinner, which was excellent. And dinner for day 2 was pasta and veggies. There isn’t any recipe for the dinner that comes from the Engine 2 Diet book, we were just on our own to create something, so we did. Ultimately, we weren’t all that happy with the flavor of the dinner. We needed to mix in a lot more veggies and add some more spices to really get it to the level we would prefer. But the pasta was delicious and the veggies were good.
We didn’t exercise much today because it was a rest day on the plan, but we did take a couple walks and a short bike ride. All in all it was a good day and we enjoyed the meals.
Myth #2: Animal protein is higher quality than plant protein
-For a long time the quality of a protein was associated with the speed at which the body could use it to rebuild human protein. This belief that “fast rebuilding protein” equated to quality protein still persists today. The truth of the matter as discussed at length in the book “The China Study” is that “slow rebuilding protein” is the most healthy…not the fast protein. Keep that in mind…slow and steady wins the race!!!

Whole Grain Pasta with Veggies
Cook pasta as directed, add broccoli into the pasta the last 2 minutes to cook
While the pasta is cooking, sauté onions, garlic, mushrooms, zucchini, and tomatoes in a little veggie broth
Drain pasta & broccoli and in a big bowl combine together the pasta & veggies. Add crushed red pepper for a kick!
