This is such a delicious egg salad recipe and so different from your regular every day salads that are sold in the convenience store. It has so much more flavor and a nice bite to it. This is one of those recipes that you can make really quick for lunch on the fly if you boil and peel your eggs the night before and leave them in the fridge ready to use. This recipe is keto and low carb friendly also for all of you guys watching your carb intake. If you are trying to stay under 50 grams of carbs for a full day of eating this recipe will fit right into your menu.
The ingredients I used are also all very budget friendly and will not break the wallet or pocketbook for those that are trying to stay on a budget while eating great delicious whole foods. Most of the time what I eat o my Keto diet are recipes like this with organic eggs and all natural ingredients with out preservatives.
Ingredients:
1 minced Jalapeno Pepper (optional)
1/3 cup of feta cheese
3 cloves of garlic
10 hard boiled eggs
1/4 cup light tasting olive oil or canola oil
1/2 a dice bell pepper
1/4 cup diced poblano pepper (optional)
1 tablespoon of yellow mustard
1/2 teaspoon smoked paprika
1 lime wedge
1 tablespoon of vinegar
1 raw egg
